  1. I am so proud of myself. It may not be a great picture, but DAMN, it was ricoooo. Simmer 1 lb of ground turkey (cooked with a quarter cup of tomato sauce, half a spanish onion, 3 gloves of garlic, 1 green pepper, black pepper, oregano, bay leaves, and a handful of chopped cilantro and raisins; I didn’t have sazon or adobo -TERRIBLE I KNOW- so I used sea salt and VegeBase instead) Remove the bay leaves!! Peel 4 super ripe plantains and cut them lengthwise into strips. Fry them in vegetable oil until yellow and set them on paper towels or newspaper to soak up excess oil. Layer the plantains, meat, and cheese (I chose mozzarella, but any melty cheese will do - my mom used to also add cream cheese for extra unctuousness) until you’re out of either plantains or meat Stir 3 eggs with a couple tablespoons of milk and pour all over the layers Bake at 350 for 20 minutes Voi-fucking-la!
